Hobo Pies

A Pie Iron or "Hobo Pie Maker" as we call them is a long handled, aluminum or cast iron, two-faced griddle for making hot bread "pies" or sandwiches. There are a number of models on the market, but I would recommend cast iron. Cast Iron is stronger and more heat resistant so it will last longer. I've had aluminum pie irons that melted in the fire leaving me with nothing but handles. Pie Irons can be found in camping supply stores, K-mart, Meijers, Target, Walmart, and sometimes even hardware stores. You can also find them on the web.

 

Below are some "Hobo Pie" recipes. They all start with two pieces of buttered bread and your iron. Open up the pie maker and lay a piece of bread down on each side buttered side out. Then add your ingredients, close and cook over the campfire for about a minute on each side. (some ingredients may take longer.)

To check them pull them from the fire and scrape the corners of the bread off. Then open the iron and check to make sure the bread is golden brown. If they stick to the iron bang each side on a rock or something. You can also spray the inside of the iron with cooking spray to help.

Have fun trying any of the following combinations.

The Original Add Hamburger (precooked and crumbled), Potatoes, Carrots, Salt & Pepper, Onion or onion salt.
Pizza Pies Add pizza sauce to one side, then top with mozzarella cheese, mushrooms pepperoni, sausage (precooked and crumbled), green pepper, onions, olives or whatever you like on your pizza.
Grilled Cheese Just ad chedder cheese slices close and cook.
Grilled Ham & Cheese Add 3-4 slices of ham and shredded swiss, chedder or monteray jack cheese.
Chicken Parmesan Spread layer of pizza sauce on EACH side. Fill with cooked, sliced chicken breast (1/4 inch thick) and sprinkle parmesan cheese and mozzarella cheese over the top. Add garlic salt to taste.
Bacon Cheeseburger Add about a 1/4 cup of Hamburger (precooked and crumbled), Bacon (precooked and crumbled) then a slice of cheese.
Stew Sandwich Add two heaping tablespoons of canned beef stew, salt & pepper to taste and cook.
Turkey Cordon Bleu Add 3-4 slices of turkey breast, 1 slice of ham, and swiss cheese.
The Detroiter Add 3-4 slices of turkey breast, 1 slice of Swiss cheese and tablespoon of Thousand Island Dressing.
Greek Pie Add diced chicken (precooked), feta cheese, chedder cheese, olives, and artichokes.
Crab Pie Add canned crab, cream cheese and onions.
Indian Style Add diced chicken (precooked), peas, diced potatoes, carrots and season with curry powder.
Sloppy Pie Add your favorite "sloppy joe" or "manwich" mix to ground beef (precooked and crumbled)
McPie Add scrambled eggs, and choice of Bacon (precooked), Suasage (precooked) or Ham, and cheese.
Corn bread Prepare a mix according to directions. Fill the cavity of the pie maker about one third and bake over a low heat until done. (no bread slices used here)
Hash browns Add chopped or shredded potatoes, onions and salt & pepper to taste.
Omelettes One omlette can be cooked in either side of the iron with it open. Use your favorite toppings or try one of these: Greek - spinach, olives and feta cheese. Or Tex Mex - Cheese, Tabasco sauce and Cilantro.
French Toast Mix egg, milk, cinnamon and vanilla into bowl. Dip a thick piece of bread into mixture. Place it into the iron and cook.
Fruit Pies Any fruit pie filling will work like cherry, blueberry, apple, or our favorite blackberry served with vanilla ice cream. YUM!
Chocolate & Banana Add squares of your favorite chocolate bar and slices of banana.
"Hobo Pies" can be made with many different ingredients so use your imagination and your left overs to create a quick easy meal your family will love. ENJOY!
